Zucchini Pancakes




3/4 Cup All Purpose Flour

1 1/2 Cups Shredded Zucchini

2 1/2 Tbsp Sugar

1 Tbsp Baking Powder

1 Tbsp Oil

3/4 Cup Milk

1 Egg

1 Tsp Vanilla Extract

2 Tbsp Butter (For Brushing Pan)




1.Sift and Stir well all dry ingredients such as flour, Sugar and Baking Powder together then set aside.

2. Add Shredded Zucchini to your dry ingredients until zucchini is coated with your flour mix.

3. In a separate bowl combine all together milk, egg and vanilla extract. Note: if your pancake batter is too thick you can just keep adding milk slowly until the batter is a little runnier.

4.Prepare your pan over medium heat and start brushing butter on a pan then start cooking your yummy Zucchini Pancake.
